Rustic sundried tomato and walnut pesto

 

1 cup walnuts-rough chopped
1 cup sun dried tomatoes-thin slice
2 cloves garlic - minced and mashed
2 tsp basil - sliced thinly
1/2 cup olive oil
to taste salt and pepper




Instructions:

Start with a hot pan. Add tbsp of olive oil. Add garlic and sauté for 2 minutes, let cool. Mix all ingredients together.

We serve this on fresh wild salmon, but it will work with any grilling fish as well as chicken and even shrimp.
