Jerk Kabobs
Ingredients:
1 lb 16-20 peeled and deveined shrimp
2 cups cooked black beans
1 red, 1 yellow onion
orange juice
The Rub:
1/2 cup fresh thyme
2 whole bunches of green onions
1/4 cup chopped - peeled ginger
3 jalapenos - whole chopped with seeds
1/3 cup peanut oil
10 garlic cloves
3 ground bay leaves
2 tsp allspice
1 tsp nutmeg
1 tbsp ground black pepper
1 tbsp coriander - ground
1 tsp cinnamon
2 tsp salt
1 juice lime
Combine all ingredients in a blender and make into a loose paste. Marinate
the 16/20 shrimp in the mix for at least a half hour.
To Prepare The Kabobs:
Soak, the skewers in water prior to assembling the kabobs. Cut up a red
onion and a red bell pepper into 1/2 inch squares. Skewer 1 shrimp the
a piece of red onion followed by a piece of red bell pepper, then another shrimp
and then repeat so that there are 3 shrimp on a skewer.
Cured Onions:
Thinly slice 1 red onion and 1 yellow onion into half circles. Place in
bowl cover with orange juice and add 2 tsp salt and 2 tbsp sugar. Let
sit for at least an hour.
To Plate:
Season and grill kabobs till done - about 5-6 minutes. Place rice and
black beans in center of plate and top with grilled kabobs. Top with cured
onions and drizzle some of the onion orange juice around plate. Garnish
with lemon and parsley.
